Tiramisu with Caramel

A version of the classic Italian dessert with caramel.


250 g
150 g
Fresh custard
4 T
Caster sugar
4 t
Granulated sugar
100 g
Luxury dark chocolate, broken into small pieces
6 T
Weak black coffee
4 T
Tia maria
Sponge fingers
2 t
Cocoa powder
2 t
Instant coffee powder


Whisk mascarpone until soft. Bear in the custard into the mascarpone. Gradually add the caster sugar, whisking constantly.
To make the caramel, melt the granulated sugar in a saucepan until liquid and brown. Pour onto a lightly oiled surface.
Allow caramel to harden, then break into small pieces using a hammer wrapped in clingfilm. Stir the pieces into the cheese mixture.
Mix the chocolate into the cheese mixture. Mix in the weak coffee and the liqueur. Dip half the biscuits into the coffee mixture one at a time and use to line the bottom of the bowl, then spoon over the cheese mixture.
Dip the remaining biscuits in the coffee mixture and cover the cheese layer. Pour over the remaining cheese mixture. Bang the dish down to settle the layers.
Mix the coffee and cocoa powders and sift over the dessert.
Chill for at least 3 hours.


Can be served with fresh cherries.
